MOSCARDINI DEL CONTADINO:
Boiled moscardini, peppers, truffled mushroom,
tomatoes cut into cubes, two pinches of pepper
and a spray of white wine.
Vermentino DOC Colle of Luni
RISOTTO AGLI SCAMPI:
Cook the rice adding broth and ½ glass
of Champagne. Fry slowly in the hot oil to a
light brown scalogno, parsley, garlic and prawns.
Cinque Terre DOC
BRANZINO ALLA LIGURE:
Cook the bass with white wine, oil and limon.
Aromatize with rosemary and laurel or olive.
Add potatoes cut in slices.
